Buckwheat Cottage Cheese Pancakes
Fluffy buckwheat pancakes
ingredients
- 1/2 C flour
- 1/2 C buckwheat flour
- 1/8 tsp salt
- 1/2 tsp baking powder
- 1 tbsp sugar
- 2/3 C cottage cheese
- 2 eggs
- 1/3 C milk
- 1 tbsp canola oil
- 2 tbsp butter
- 1/4 C maple syrup

Mix dry ingredients in one bowl. Whisk eggs, cottage cheese, milk and oil in separate bowl until smooth. Add dry ingredients to the wet mixture and mix until fully incorporated.

Heat skillet, melt a little butter, pour batter onto skillet (approximately 1/4 C each.) Brown, flip, brown, eat.

Place 1 tbsp butter and maple syrup in microwave safe dish, melt together.
