Super Bowl Chili
A regular at our Super Bowl parties...
ingredients
- 3 lbs chuck steak (can use ground beef)
- salt, pepper, cumin, coriander, chipotle powder, chili powder, cinnamon
- 2 onions, chopped
- 1 small can tomato paste
- 3 cans pinquinto (small) pinto beans
- 16 oz. canned tomatoes, chopped style
- black molasses
- liquid smoke
- chicken broth
- limes, cheese, cilantro

Cut chuck steak into small pieces (or just use ground beef as is).

Season with salt, pepper, cumin, coriander, chipotle powder, chili powder, cinnamon.

Saute in very hot pot (in a small bit of canola if steak; ground beef makes its own oil). If using ground beef, drain fat and add a bit of olive oil. Add onions and cook to soften. Stir in tomato paste and cook a few minutes. Add pinto beans (drained, rinsed in can, and drained again). Add canned tomatoes.

Add black molasses (1/4 Cup maybe), small bit of liquid smoke, broth or water till just covered.

Cook covered, very slowly (barely simmering on stove or in oven at 300) until meat is tender. If not thick enough, add some more tomato paste.

Serve with lime wedges, shredded cheese and cilantro (and cornbread)
