This recipe was developed by The Culinary Institute of America® for The Coca-Cola Company.
2 sticks Margarine
3 Tbls. Cocoa
1 cup Coca-Cola
2 cups unsifted All-purpose Flour
2 cups Sugar
½ cup Buttermilk
1 tsp Vanilla
2 Eggs
1 tsp. Baking Soda
1½ cups Minature Marshmallows
6 Tbls. Coca-Cola
½ cup Margarine
½ pd. box Powdered Sugar
3 Tbls. Cocoa
1 cup chopped Nuts (optional)
Combine cocoa and Coca-Cola and heat to boil, set aside to cool slightly. Cream margarine and sugar, add eggs and beat until smooth. Mix baking soda with buttermilk. Alternating between buttermilk and flour, add a little at a time to creamed margarine mixture. Pour the Coca-Cola mixture over this and whip thoroughly. Add vanilla and marshmallows and mix. Batter will be thin and marshmallows will float to the top.
Grease and flour 9 x 12 inch baking pan. Pour batter into pan and bake at 350 degrees for 45-50 minutes or until top springs back when lightly touched.
Ice cake while still hot. For icing: heat 6 tablespoons of Coca-Cola and pour this over margarine, powdered sugar and cocoa. Mix well until smooth. Add nutmeat, if desired.
