Mary's Onion Soup
My family is crazy about this soup. It’s guaranteed to melt your heart.
ingredients
- 8 onions
- 8 cups of beef stock
- 1 teas. sugar
- 1 teas. ground thyme
- 1 bay leaf
- Salt and pepper
- 2 tbs. red wine
- 2 tbs. olive oil
- 1 tbs. butter
- 1 baguette
- Swiss cheese

Slice onions and slowly saute with salt, pepper, olive oil, and sugar until caramelized (about 45 minutes).

Add stock, thyme,and bay and bring to a low simmer for 40 minutes, stirring occasionally.Add red wine and simmer for 5 more minutes to cook out the alcohol.

Serve in soup bowls topped with a toasted slice of french bread and cheese. Put under the broiler for 1 minute to melt the cheese.
