Blueberry Brunch Bake

Tastes like French toast with maple syrup.

ingredients

  • 1 one lb loaf day-old French bread cut into 1/2 in. cubes
  • 1 1/2 C. blueberries
  • 12 oz. cream cheese, softened
  • 8 eggs
  • 1/2 C. plain yogurt
  • 1/3 C. sour cream
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 C. milk
  • 1/3 C. maple syrup

directions

Place half the bread cubes in a greased shallow 3 quart baking dish. Sprinkle with blueberries. In a mixing bowl, beat cream cheese till smooth. Beat in eggs, yogurt, sour cream, vanilla and cinnamon. Gradually add milk and syrup till blended. Pour half over the bread. Top with remaining bread and cream cheese mixture. Refrigerate overnight. Remove from refrigerator 30 min. before baking. Cover and bake at 350 for 30 min. Uncover, bake 20-25 min. until inserted knife comes out clean. Let stand 5 min. before serving.
