Hot and Cold Sesame Noodles
ingredients
- 1/2 lb spaghetti, or lo mein noodles
- 1/4 cup dark soy sauce
- 1/4 cup peanut butter (microwave 15 seconds to soften)
- 2 Tbls rice wine vinegar or cider vinegar
- 1 Tbls sesame oil
- 2 Tbls hot sauce
- 2 cups shredded cabbage and carrot mix
- 1 cup bean sprouts
- 3 scallions, chopped on an angle
- 2 Tbls sesame seeds
directions
Cook pasta to al dente, then run it under cold water to stop the cooking process, and drain well. Meanwhile, whisk together soy, peanut butter, vinegar, oil, and hot sauce. Add noodles and veggies and toss to coat. Sprinkle with scallions and sesame seeds.
notes
Be creative! Add cooked chicken, snow peas, etc.!
