Tortilla Soup
ingredients
- 1 1/2 lbs. chicken breasts (skinless/boneless)
- 1 onion (chopped)
- 2 fresh jalapenos
- 4 cloves garlic
- 2 carrots, chopped
- 4 tsp. vegetable oil
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. lemon pepper
- 1 tsp. salt
- 1 tblsp. hot sauce
- 1/2 cup flour
- 1 14-oz. can tomatoes
- 4 14oz. cans chicken broth
- 8 corn tortillas

Saute chicken, oinions, jalapenos, garlic, carrots, and chicken in 4 tblsp. of oil in stockpot for 5 minutes. Stir in cumin, chili powder, lemon pepper, salt, hot sauce and flour. Add tomatos and chicken broth; mix well. Simmer for 1 hour, stirring frequently.

Fry tortilla strips in 1/4 inch of oil in skillet until crisp - drain.

Arrange tortilla strips, sour cream, avocado, cheese and cilantro in soup bowl and ladle in soup.
