Garlic Roast Pork w/ Mash
ingredients
- 6- rib rack of pork loin
- 2 unpeeled heads of garlic
- 4 cloves of garlic
- Olive oil, sea salt, and pepper
- Garlic Mash
- 5 potatoes
- Butter
- 1/2 cream
- Sea salt

-Preheat oven to 450 degrees

-Cut slits into pork loin on all sides; insert cut up garlic

-Place meat in baking dish skin-side up

-Add garlic heads to pan
- 5
-Rub oil, sea salt, and pepper all over pork loin

-Bake for 25 minute, or until skin is crisp

-Remove garlic heads; reserve for mash

-Reduce heat to 350 degrees, cook for an additional 25-35 minutes

Garlic Mash

-Boil potatoes for 12 minutes

-Drain

-Squeeze baked garlic heads into potatoes

-Add butter and cream

-Mash together adding salt and pepper to taste
