Pound-Dropping Potato Salad
ingredients
- 1 pound small red potatoes, peeled and cut into 1-inch cubes (3 cups)
- 1/2 cup nonfat play yogurt
- 1/4 cup reduced-calorie mayonnaise
- 1/2 tsp cider vinegar
- 1 tsp. Dijon mustard
- 1 T minced parsley
- 1/4 cup minced celery
- 1/2 cup finely chopped scallions
- 1/4 cup diced red pepper
- pinch celery seed
- pinch freshly ground black pepper
- pinch salt
- 2 T sweet pickle relish

Place potatoes in a small pan with enough water to cover. Put lid on pan and boil until tender- about 10 minutes. Drain and cool.

Combine yogurt, mayonnaise, vinegar, and mustard in a large bowl and mix well. Add the parsley, celery, scallions, red pepper, seasonings, and relish. Mix well, then fold in the cooled potatoes.

Store tightly covered in refrigerator until well-chilled about 2 hours.
