Chicken Souvlaki
ingredients
- 2 lemons
- 2 tablespoons finely chopped fresh oregano leaves
- 1/2 teaspoon crushed red pepper flakes
- 1/4 cup extra-virgin olive oil
- 4 cloves garlic, minced
- Salt and freshly ground black pepper
- 4 chicken breast, about 1 1/2 pounds, cut into bit size pieces
directions
Combine the zest and juice of 2 lemons, oregano, red pepper flakes, garlic and olive oil in a plastic storage bag. Add chicken and season with salt and pepper, let marinade for 4 to 6 hours. Cook 8 to 10 minutes, turning once over medium heat, until firm and juices run clear. Serve with tzatziki sauce in a pita pocket.
