Shrimp Creole over Rice
ingredients
- 1 tbsp olive oil
- 1 tbsp flour
- 1 stalk celery
- small onion, chopped
- 1 clove garlic,minced
- 1 green, chopped
- 1 14 1/2 oz can diced tomatoes
- 2 tbsp tomato paste
- 1/4 cup red wine 1 cup chicken broth
- 1 bay leaf
- pinch of paprika
- 1/4 tsp basil
- 1/2 tsp salt
- 1/4 tsp oregano
- 2 tbsp scallions, minced
- 1/4 tsp pepper
- 1 tbsp lemon juice
- 1 lb shrimp
- 2 cups rice, prepared according to package directions
- 1 tbsp parsley, minced

Heat oil in a skillet, stir in flour and cook over low heat, stirring occasionally until mixture is smooth about 5 minutes.

Stir in celery, onion, garlic, and green pepper; sauté 5 minutes.

Add drained tomatoes, paste, wine, broth, bay leaf, paprika, basil, oregano, salt and pepper.

Bring to a boil; reduce heat to low.

Stir in shrimp and simmer 5 minutes. Stir in scallions, parsley, and lemon juice; simmer 1 minute.

Remove bay leaf.

To serve, spoon mixture over rice.
