Southwest Blackbean & Corn Salad
ingredients
- 2 cups dried black beans
- 2 cups corn (cooked)
- 2-3 cloves garlic (minced)
- 1/2 cup or more minced onion
- 1 red pepper
- 1 tsp salt
- 1/2 cup olive oil
- 1/2 cup fresh lime juice (2-3 limes)
- 2-3 tsp whole cumin seed
- 1/2 cup fresh cilantro (minced)
- 1/2 cup fresh parsley
- 1/2 tsp crushed red pepper
- ground black pepper

Soak beans overnite. Cook on low 1 1/2 hours(not stiring) covered with water. Drain and rinse well with cold water

Combine Beans, corn, garlic, onion, pepper, salt, oil, lime juice, in a large bowl.

Roast cumin in skillet on low/med heat stiring for several minutes. Add seed, cilantro, parsley, red and black bepper and stir gently.
