Preserves Figs
ingredients
- 4 pounds figs
- 3 1/2 pounds sugar
- 1/4 lemon juice
- 2 lemons, sliced
- A few whole pieces of cinnamon or ginger

Wash and peel firm, ripe figs

Combine sugar and lemon juice and add enough water to dissolve sugar

Add figs and lemon slices and cook about 45 minuets (the cinnamon or ginger may be tied in cloth bag and cooked with figs for added flavor)

Stir frequently to prevent sticking

Pack hot sterile jars and seal at once
