Preserves Figs

ingredients

  •  4 pounds figs
  •  3 1/2 pounds sugar
  •  1/4 lemon juice
  •  2 lemons, sliced
  •  A few whole pieces of cinnamon or ginger

directions

  • 1

     Wash and peel firm, ripe figs

  • 2

     Combine sugar and lemon juice and add enough water to dissolve sugar

  • 3

     Add figs and lemon slices and cook about 45 minuets (the cinnamon or ginger may be tied in cloth bag and cooked with figs for added flavor)

  • 4

     Stir frequently to prevent sticking

  • 5

     Pack hot sterile jars and seal at once
