Peas and Bacon
ingredients
- 1 cup (about 6oz) bacon slices, chopped
- 1/2 cup red onion, finely chopped
- 1 garlic clove minced
- 1/3 cup prepared chicken broth
- 6 cups frozen peas
- 1/4 tsp pepper

Cook first 3 ingredients in large frying pan for 5 to 10 minutes, stirring occasionally, until bacon is crisp.

Transfer with slotted spoon to paper towel lined paper to drain. Drain and discard drippings from frying pan. Wipe pan with paper towels.

Measure broth into same frying pan. Bring to a boil. Add peas and pepper. Cook, covered, for 5 to 8 minutes until peas are tender. Drain. Add bacon mixture. Stir.
