Avocado Summer Salad
Fresh, healthy, colorful salad perfect for summertime!
ingredients
- 2 medium ripe avocados
- 1 red pepper
- 1 yellow pepper
- 4 scallions
- 1 cup black beans (low sodium)
- 1 cup grape tomatoes
- 1/4 cup cilantro
- 1 lime
- 2 tablespoons olive oil
- 1/4 teaspoon ground cumin

Dice avocados, red pepper, yellow pepper. Combine in large mixing bowl.

Chop scallions and cilantro and also add to bowl. If canned, drain black beans. Rinse in fresh water to get rid of excess of sodium. Add to bowl.

Cut cherry tomatoes into halves and put in bowl.

Cut limes in half. Squeeze halves into separate small bowl. Add in olive oil and cumin to same small bowl.

Pour contents of small bowl into large mixing bowl. Mix all ingredients thoroughly.
