Coq au Vin
ingredients
- 6 pieces of chicken
- 3/4 cup chopeed onions
- 1 sliced carrot
- 1 clove of garlic, minced
- Olive oil
- 2 tablespoons of flour
- 1/2 teaspoon of thyme
- 1 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 teaspoon of marjoram
- 1/2 bay leaf
- 2 tablespoons chopped parsley
- 1 1/2 cups red wine
- 1/2 pound whole mushrooms

Wash and dry chicken.

Saute onions, carrot and garlic in olive oil.

Remove the vegetables and brown the chicken. Add vegetables back to pan.

Mix together flour, thyme, salt, pepper, marjoram, bay leaf, parsley and red wine.

Pour liquid into pan over chicken and vegetables. Simmer, covered, over low heat, until done. About 1 hour.

For last 5 minutes of cooking, add 1/2 lb. whole mushrooms.
