jessicajessica pashkow

ingredients

  • 6 large grated potatoes (regular or sweet)
  • 1 small onion
  • 3 eggs, beaten
  • 2 tablespoons finely chopped parsley (optional)
  • 1 box of good quality latke mix
  • salt & freshly ground pepper
  • a few tablespoons of olive oil

directions

  • 1

place a large nonstick baking sheet (with sides) in the oven and preheat to 450.

  • 2

Coarsely grate the potatoes & onion into a mixing bowl, using a food processor or box grater (large holes).

  • 3

Using cheesecloth or paper towel, squeeze out all the liquid you can.

  • 4

Stir in the eggs, parsley, latke mix and salt & pepper to taste.

  • 5

Pour a couple of tablespoons of oil on the hot baking sheet, spreading it around with the back of a metal spatula.

  • 6

Spoon small mounds of mixture onto the baking sheet to form 2-inch pancakes, leaving an inch or so between them.

  • 7

Drizzle more oil over the tops of the latkes.

  • 8

Bake until golden brown, 6-8 minutes per side, turning once with a spatula.

  • 9

When you turn them, be sure to flip them onto spots on the baking sheet that stil have oil.

  • 10

Do not overcook or the latkes will become too soft or too dark.

  • 11

Transfer to a serving platter and serve immediately.

  • 12

    Makes about 24 2-inch latkes
