tzatziki
this is great to have in the fridge. Not just for greek food, but for veggie dip, with pita chips, put it on burgers (lamb or beef) or use it in sandwiches.
ingredients
- 500 ml tub greek style yogurt (thicker the better, and use at least a 3.25% fat
- 1 cucumber, grated
- minced garlic
- lemon juice 1-2 tsps.
- dill (optional)
directions

Grate the cucumber (if it is particularly juicy you can squeeze some of the moisture out) and stir it into the yogurt with the garlic and lemon juice. Season with salt and pepper and let mellow in the fridge if you have time, if not, serve away.

I like to add some dill, I find it rounds out the flavour, but you see what you like.
