Brandon's Muffins
ingredients
- 3/4 c whole wheat flour
- 3/4 c oat flour
- 1/2 c white flour
- 1/4 c ground flax seeds
- 1/4 c crude oat bran
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 c sugar
- 1/2 c olive oil
- 2 eggs
- 1 c of canned pumpkin or mashed banana or chopped apple (skinned)
- 1 c mini carob chips (optional, but a good touch)
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 - 3/4 c milk

Sift all flours; put remaining fiber back in bowl with other flour.

Mix flax seed, oat bran, baking powder, baking soda, sugar, olive oil and eggs with electric mixer. Then add pumpkin or banana, carob chips, cinnamon, and nutmeg.

Mix batter again. Add milk a little at a time until thick but smooth - slightly thicker than pancake batter.

Pour into greased muffin tin.

Bake at 350.

Cook 25 minutes for muffin tins; 20 minutes for cupcake tins, or 1 hour for a loaf pan.

Test with toothpick.
