Potato Gnocchi

Peel potatoes, chop roughly and steam or boil until very tender.

Drain thoroughyl and mash until smooth.

Using a wooden spoon, stir in butter and flour, then beat in eggs.

Let cool.

Turn onto a floured surface and divide into two.

Roll each into a long sausage shape, then cut into short pieces and press each piece with the back of a fork.

Cook gnocchi, in batches, in a large pan of boiling salted water for about 2 minutes or until it rises.
