Scones -oatmeal cranberry
An oatmeal cranberry scone with clotted cream.
ingredients
- 2 1/2 c. flour
- 2/3 c. sugar
- 4 t. baking powder
- 1 t. salt
- 1 c. butter, very cold
- 2 c. oatmeal
- 2/3 c. cranberries
- 2 eggs, beaten
- 1 c. milk
- Clotted Cream:
- 6 oz. softened cream cheese
- 2 c. heavy whipping cream
- 2 T. powdered sugar

In a food processor blend the first five ingredients until just pea size--don’t over process, do not break down the butter. Then add the rest of the ingredients and process just until incorporated.

On a floured board divide the dough into two, round circles about an inch thick. Cut into triangles (or use cookie cutters for special occasions) and place onto baking sheet. Brush with melted butter. Bake at 375° for 15 minutes or until browned.

Serve with clotted cream and jam.

For the clotted cream: beat the ingredients with mixer until light and fluffy.
notes
May also add some orange zest during the second mixing stage. Serve with clotted cream, jam and tea.
