Healthy and Delicious Mexican Salad
ingredients
- For Dressing:
- 1 clove garlic
- 1/4 cup cilantro, chopped
- Juice of 1.5 limes
- 1/8 cup mango juice (found in mexican foods aisle)
- 1/4 cup olive oil
- salt & pepper
- For Salad:
- 3/4 lb. Chicken, diced
- 1 head Iceberg lettuce, chopped
- 3 plum Tomatoes, diced
- 3 Scallions, diced
- 3/4 cup Black beans, drained
- 1 Mango, sliced or diced
- 1-2 Avocados, sliced or diced
- Packet of taco seasoning

1. Cook chicken with taco seasoning according to packet directions and immediately place in fridge to cool.

2. Combine ingredients for dressing in food processor.

3. Combine remaining ingredients in large bowl, add chicken, dressing and toss.

4. Serve with lime wedge and tortillas.
