Melissa's Pasta Salad :)
Here’s a little something I like to pull together for that easy summer weekend dinner or for the rockin’ potluck picnic.
ingredients
- Whole wheat penne pasta, one box
- fresh basil, handful
- fresh arugula, two handfuls
- fresh spinach, one handful
- cherry tomatoes, halved, about a cup
- pine nuts, 2-3 tablespoons
- fresh buffalo mozzarella, 1/2 cup cut into small cubes
- yummy yummy olive oil
- rice wine vinegar
- salt
- pepper
- Chardonnay, 1 bottle

So here’s how you make this puppy:

1) Boil water in a pot - so sad that all cookbooks tell you to do this. What do they take us for???? Anyways, keep an eye on that pasta, about 11 minutes is right for al dente.

2) While pasta is cooking, put the pine nuts on a tray and broil a few minutes until toasted

2) Strain the pasta and put in large bowl (again, duh!)

3) Add the spinach, basil, arugula, tomatoes, pine nuts and mozzarella

4) add some olive oil, (lots of it k-rapper it is good for your system! :))

5) add the rice wine vinegar, about two tablespoons or so

Now arguably the best step -

7) Bust open that chardonnay pour two gigantic glasses, toast each other, celebrate finding such happiness. Then of course toast your dear friend Melissa who is certainly toasting you both as she writes this with her own glass xo.
