Joan's Apple Pie

ingredients
For Pie Filling- Plain pastry dough for two crusts
- 6-7 cups sliced apples (about 2-2 1/2 lbs.)
- 1 cup sugar
- 4 tsp. flour
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 tbsp.lemon juice
- 1 tsp. grated lemon rind
- 3 tbsp. butter or margarine
- 2 cups sifted all-purpose flour
- 3/4 tsp. salt
- 2/3 cup shortening
- 7 tbsp. ice water (approx)

Preheat oven to 450°

Line a pie plate with bottom crust. Half-fill the pie crust with sliced apples. Mix the sugar, flour, spices, lemon juice and rind, & dot with half butter

Add rest of apples to fill pastry liberally and sprinkle half of the spices and sugar etc. over apples, dot with other half butter. Cover with top crust and put slashes in places to allow steam to escape.

Bake in very hot oven 20 mins. And reduce heat to 350 for 45 min. Bake until apples are tender, and remove to rack
