Coconut Carrot Bread
ingredients
- 2 c. brown sugar
- 1.5 c. oil (corn or light sesame)
- 4 eggs beaten
- 2 c. whole wheat flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1 tbl. cinnamon
- 1 c. chopped walnuts
- 1 tsp. vanilla
- 1 c. vanilla
- 1 c. grated coconut (preferably unsweetened)
- 1/2 (or more) c. grated carrots
- raisins optional

Mix sugar with oil and beaten eggs. Blend flour with baking powder and salt in separate bowl. Combine wet and dry ingredients. Fold in cinnamon, nuts, coconut, vanilla and carrots. Fill greased pans half full.

Bake for 1 hour at 350 degrees.
