Place roast in crock pot & add 2" water.
Place on high heat. Add carrots cut into quarters lengthwise. Add potatoes with skins on, cut into 1“ pieces. Cut onion into 1/2” thick pieces & sprinkle salt sparingly on top of roast. Let cook all day.
