World's Best Bean Soup

Recipe for packages of beans and recipe to cook them.
ingredients
- Mix contains one pound of each of dried: navy beans, Great Northern beans, pinto beans, soybeans, red beans, yellow split peas, green split peas, black-eyed peas, lentils, large limas, baby limas, barley pearls.
- 1 pkg. World’s Best Bean Soup Mix
- 2 quarts water
- 1 1/4 tsp. salt
- 1/2 tsp. red & black pepper
- 1 large onion - sliced
- 1 16 oz. can tomatoes, plus extra fresh tomatoes - chopped (or use 2 cans of tomatoes)
- 1 ham hock
- 1 tsp. green chilies
- 1 clove garlic - cut in half
- 1 clove garlic - minced
- 3 T. lemon juice
- 1 T. bacon grease
- 1 pkg. andouille sausage (or other sausage or rotisserie chicken)

Rinse the soup mix and place in a Dutch oven. Add halved garlic. Cover with water and soak overnight.

Drain the beans; remove garlic halves. Add ham hock, bacon grease, salt and pepper. Cover and bring to a boil. Reduce heat, add the minced garlic and simmer 1 1/2 hours or until the beans are tender. Remove the ham hock, add the remaining ingredients. Simmer for 30 minutes, stirring occasionally.

The mix will make 20 (2 cup) packages.
