Poultry - Honey Chicken Stir-fry
Light and flavorful.
ingredients
- 1 lb. chicken - cut into 1 inch pieces
- 1 clove garlic - minced
- 2 T. canola oil
- 4 T. honey
- 2 T soy sauce
- 1 T. teriyaki sauce
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/4 tsp red pepper flakes
- 1/2 tsp ground ginger (divided)
- 3 cups chopped vegetables (e.g., broccoli, carrots, pea pods)
- 1 T cornstarch mixed in 1/4 cup water
- Juice of 1/2 orange or 1/8 cup orange juice

Stir fry chicken and garlic in oil. Add honey, soy sauce, teriyaki sauce, salt, pepper, red pepper flakes and 1/4 tsp ginger. Set aside.

Stir fry vegetables, sprinkled with 1/4 tsp ginger, until tender crisp. Return chicken mixture to wok/pan. Add cornstarch/water mixture and orange juice. Stir 1 minute or until sauce thickens.

Serve tossed with pasta or over rice.
