Chicken, Nectarine, and Macadamia Nut Salad

Ramekins Finger Lickin’ Chicken

ingredients

  • 10 ounces mixed salad greens (about 16 cups loosely packed)
  • 2 freestone nectarines (about 12 ounces total), pitted and cut into thin slices
  • 1/4 cup thinly sliced red onion
  • 1/2 cup coarsely chopped fresh cilantro
  • 1/4 cup bottles Asian or Chinese chicken salad dressing, or more to taste
  • Salt to taste
  • Freshly ground black pepper to taste
  • 4 cooked boneless, skinless chicken breasts, cut into 1/2-inch slices
  • 1/4 cup chopped roasted, salted macadamia nuts

    In a large bowl, combine the greens, nectarines, onion, cilantro, and dressing. Add more dressing, salt, and pepper to taste.

    Divide the salad among 4 plates. Arrange the chicken on top, sprinkle with the nuts, and serve.
