Grandma Navarro's Chicken Enchiladas

This recipe is from Laurie’s Grandmother Navarro and was always a Navarro family favorite.

  • Boil chicken until cooked. Save broth for Spanish rice.

  • Brown 1 clove garlic in a little oil. Add enchilada sauce, tomato sauce and oregano.

  • Fry tortilla - put in sauce for 1 minute. Add grated cheese, shredded chicken, chopped olives, chopped onion.

  • Roll up and pour sauce over top. Sprinkle with cheese and bak at 350 for 20 minutes.
