Grandma Navarro's Chicken Enchiladas
This recipe is from Laurie’s Grandmother Navarro and was always a Navarro family favorite.
ingredients
- 2 - 3 large chicken breasts
- 1 large can Las Palmas enchilada sauce
- 1 clove garlic
- 2 cans tomato sauce
- pinch oregano
- corn tortillas
- grated cheese - jack, cheddar
- black olives, chopped
- onion, chopped.

Boil chicken until cooked. Save broth for Spanish rice.

Brown 1 clove garlic in a little oil. Add enchilada sauce, tomato sauce and oregano.

Fry tortilla - put in sauce for 1 minute. Add grated cheese, shredded chicken, chopped olives, chopped onion.

Roll up and pour sauce over top. Sprinkle with cheese and bak at 350 for 20 minutes.
