Cantonese Chicken Salad
ingredients
- 5 chicken breasts
- 1 1/2 cup teriyaki marinade
- Curry Dressing
- 2 tbsp pineapple juice
- 2 tbsp fresh lemon juice
- 2 tbsp brown sugar
- 1 1/2 tbsp curry powder
- 2 tsp soy sauce
- 2 cloves garlic - minced
- 1 cup mayo
- Salad
- 1 head iceberg lettuce - sliced
- 1 cup celery - chopped
- 1/4 cup fresh cilantro - chopped
- 1 bunch radishes - thinly sliced
- 4 green onions - sliced
- 1 can sliced water chestnuts - drained
- 1/4 cup slivered almonds - toasted
- 2 cups chow mien noodles

Marinate chicken for 2 hours, broil or grill until done. Slice.

Dressing - combine all ingredients, set aside.

Toss salad and dressing just before serving. Top with chicken.
