Chicken Fajtas

These fajitas are perfect for 2 people or 10 people, taking the same time to make either way. They have a perfect amount of kick and are sure to please!
ingredients
- 1/2 cup soy sauce
- 1/3 cup water
- 1/3 cup white vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Crushed red pepper, to taste
- 1 pound skinless, boneless chicken breast
- 1 tablespoon cooking oil
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 orange or red bell pepper, cut into strips
- 1 cup onion, sliced vertically
- 1 teaspoon seasoned salt
- tortillas
- salsa (optional)
- sour cream (optional)
- guacamole (optional)

1. Combine first six ingredients in a small bowl; reserve 1/4 cup of the marinade.

2.Combine remaining marinade with the chicken into a zip-top bag. Allow to marinade for 1 to 3 hours.

3. Heat the grill. Discard marinade from chicken and grill chicken until cooked through, roughly 10 minutes per side depending on thickness.

4. Heat oil in a large skillet over medium-high heat. Add peppers and onion; sprinkle with seasoned salt. Sauté for 15 minutes or until the vegetables are tender.

5. Add the reserved marinade and cook for an additional 2 minutes, until the vegetables soak in the liquid.

6. Cut cooled chicken into strips and add to vegetable mixture.

7. Warm tortillas in the microwave or on the grill.

8. Serve fajitas with optional salsa, sour cream, and/or guacamole.
notes
Try with either beef or shrimp for a whole new take on the this recipe. Also, if using sour cream, best results are yielded when spreading sour cream on the tortilla and then adding fajita mixture.
