Pineapple Cake with Rum-Caramel Sauce

  • 1 cup margarine
  • 5 eggs
  • 1 cup pineapple or lemon yogurt
  • 2 1/2 cups all-purpose flour
  • 1/2 cup yellow or white cornmeal
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 cups sugar
  • 1 tsp vanilla
  • 8-oz. can crushed pineapple (juice pack)
  • RUM-CARAMEL SAUCE:
  • 12 oz. jar of caramel ice cream topping
  • 1-2 TBS dark rum OR reserved pineapple juice
