Fajitas
Delicious great to make in big quantities and keep as a leftover for a wonderful lunch.
ingredients
- 2-3 lbs. meat of choice; (ground beef, sliced sirloin steak, or boneless skinless breast of chicken)
- 2-3 packets of Lawry’s Fajita seasoning packets(1 packet per lb. of meat)
- 3 large bell peppers(1 red, 1 green, 1 yellow)
- 1 med-large onion
- 1 jar of taco sauce or salsa (med. hot)
- vegetable oil or garlic oil
- chili powder
- flour tortillas
- lettuce(shredded)
- cheddar cheese
- sliced tomato
- salsa and chips
- sour cream and guacamole
- steamed rice
- re-fried beans

Preheat oven to 250°. Wrap tortillas in aluminum foil and place in oven to warm while you prepare the meal.

Begin to steamed rice and slowly warm re-fried beans.

In a large skillet heat 3 tablespoons of vegetable or garlic oil. Add thinly sliced steak or chicken and cook(for ground beef omit oil).While cooking meat add sliced onion and on packet of Fajita mix. Fill empty seasoning mix packet with water and add to cooking meat. Once meat is cooked thoroughly simmer and add other seasoning packets and sliced and cored bell peppers. Also add taco sauce or salsa and simmer for 10 minutes while you prepare the rest of the meal.
