HERB BAKED EGGS
ingredients
- 4 Slices of ham (or 8 thin slices)
- 6 eggs
- 2 teaspoons prepared mustard
- 0.5 cup plain yogurt
- 1.5 cups shredded cheddar cheese
- 4 teaspoons chives or parsley
- salt and pepper to taste
directions
Grease au gratin (or oven safe Pyrex custard bowls) or spray them with cooking spray. Line each with a ham slice, or two thin slices. In a bowl beat the eggs with the mustard and yogurt. Stir in 1/4 of the grated cheddar cheese; stir in 1/2 the chives or parsley. Pour or spoon the egg mixture into the dishes; sprinkle with the remaining cheese and herbs. Base in a 375 degree oven for 15-20 minutes or until firm and puffed. May be served in the dish or out.
