The Bortell's Frittata

You can put anything in this--just like any omelet. The onions seem to be a key ingredient. Asparagus works as well as spinach, or perhaps add mushrooms or shrimp. These frittatas are delicious, whatever you use.

ingredients

  • 5 eggs
  • 1 package frozen spinach, thawed and drained
  • 1 Tbsp water
  • 1 small to medium onion, chopped
  • 1 large garlic clove, minced
  • 2 Tbsp olive oil
  • Salt and pepper to taste
  • 1/4 - 1/2 cup feta cheese, crumbled

    Thaw and drain the frozen spinach. Mix with the 5 eggs and the water. Set aside.

    Sauté the garlic and onion in the olive oil until golden. Mix in the spinach and egg and cook until the egg is solid and separated from the pan.

    Crumble the feta cheese over the top. Salt and pepper to taste.

  • 4

    Transfer the pan to the broiler and broil for 2-3 minutes uncovered until the Feta cheese starts to brown.
