Curried Rice with Lentils
Mom’s recipe for curry with apples and raisins
ingredients
- 2 Tbls canola oil
- 1\2 onion chopped
- 3 cloves garlic minced
- 1\4 tsp ground ginger
- 1\2 tsp turmeric
- 1 - 3 tsp curry powder or more to taste
- 1 cup brown rice -washed
- 3\4 cup dried lentils- washed and sorted
- 4 cups water or vegetable broth
- salt to taste
- 1\2 cup raisins or currants
- 1\4 cup sunflower seeds
- 2 apples diced
- yogurt for topping

Heat oil in heavy pan and sauté onion and garlic. Add curry, ginger, & turmeric and sauté a few minutes longer. Add more oil & the rice and sauté a few minutes. Add lentils, water, salt, raisins & sunflower seeds. Bring to a boil, then cover & reduce heat to simmer for 35 min. Add apples & simmer covered 15 minutes longer until water is absorbed.

Serve topped with plain yogurt.
