MAKE AHEAD MASHED POTATOES
ingredients
- 5 lbs baking potatoes, peeled and cubed
- 3/4 cup warm milk
- 4 Tbsp butter, divided
- salt, pepper
- 1 8oz pkg cream cheese
- 1/4 cup sour cream

Place potatoes in large pot, cover with water. Bring to a boil. Reduce heat and simmer 15 minutes or until desired tenderness.

Combine milk, 2 Tbsp butter, salt, pepper in large bowl. Add potato mixture, let stand 5 minutes or until butter melts.

Beat potatoes with electric mixer at medium speed until smooth. Blend in cream cheese, sour cream. If potatoes seem dry add more milk/or sour cream.

Beat until fluffy. Cover and refrigerate until needed, up to 2 weeks.

When ready to serve, spoon out desired amount and place in greased baking dish. Top with paprika and dived butter. Bake about 20 minutes, or until bubbly.
