Bacon and Asparagus Sandwiches
This has become one of our family favorites. So easy to make and totally delicious. Saveur Magazine left out the Mozzarella cheese and prepared the asparagus differently. But then I love sautéing things in butter.
ingredients
- 8 slices wheat bread
- Butter
- 1 lb bacon
- 4 slices mozzarella cheese
- 1 lb asparagus
- Beaumonde seasoning or other seasoned salt
- Lemon pepper seasoning
directions

Fry the bacon slices until crisp. Set aside on a paper towel to drain.

Sauté the asparagus over medium heat in a generous dollop of butter. Season while cooking with the Beaumonde and lemon pepper to your taste.

Toast and butter the wheat bread. Keep in a warm spot such as a plate in the oven until needed.

Assemble the sandwiches with a slice of mozzarella, 3-4 strips of bacon, about 6 spears of asparagus, and enjoy.
