Pumpkin Bread with Chocolate Chips

ingredients

  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1/2 cup maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ginger
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup canola oil
  • 1 cup chocolate chips
  • Ener-G Egg Replacer, 2 eggs
  • 1/3 cup soy milk

    Preheat oven to 350 degrees F.

    Combine dry ingredients in a small bowl. Combine wet ingredients in a large bowl, then stir in dry ingredients. Mix well. Stir in chocolate chips.

    Pour batter into a greased 9x5 inch loaf pan. Bake 45-50 minutes.
