Sour Cream Lemon Pie
I use the lemons right off the tree in my back yard!
ingredients
- 2/3 c sugar
- 3 tbs cornstarch
- 1 c milk
- Yolks from 3 eggs
- 1 tsp grated lemon peel
- 1/4 tsp lemon juice
- 1/2 stick butter, cut into small pieces
- 1 c sour cream
- 1 9" pie shell, baked and cooled
- whipped cream
- lemon slices for garnish

1. Mix sugar and cornstarch in a medium pan. Whisk in milk until smooth. Then stir in yolks until well blended. Stir in lemon peel and juice.

2. Add butter and whisk constantly over medium heat, just until boiling. Remove from heat and stir 1 minute longer. Cover surface with plastic wrap to keep skim from forming. Cool to room temperature.

3. Stir in sour cream until well blended. Pour into pie shell. Cover loosely. Refrigerate at least 6 hours.

4. Shortly before serving, top with whipped cream and lemon slices.
