Lentil Feta Salad
A unique salad that’s healthy and delicious.
ingredients
- 1 c dried lentils
- 2 cloves garlic, peeled and halved lengthwise
- 1 bay leaf
- 2 celery stalks, finely chopped
- 1 small red onion, diced
- 1/4 c dried parsley
- 1 small red pepper, diced
- 1/4 tsp dried rosemary, chopped
- 1/3 c lemon juice
- 2 tbs olive oil
- 4 oz feta, crumbled
- pepper to taste
- 1/2 small cucumber, cut into 1/8" slices

Bring a pot of water to boil. Add the lentils, garlic and bay leaf. Simmer 20 minutes until lentils are tender. Drain and rinse under cold water. Discard garlic and bay leaf.

In a large bowl, combine the lentils, celery, onion, red pepper, parsley and rosemary.

In a small bowl, whisk together the lemon juice and olive oil. Drizzle over the lentil mixture. Add the feta and stir gently. Stir in the black pepper and cucumber.
