Tortellini and Spinach Toss
A nice vegetarian entree.
ingredients
- 20 oz package of fresh tortellini
- 2 tsp olive oil
- 4 cloves of garlic, minced
- 1 c chicken broth
- 1/4 tsp red pepper flakes
- 1 - 14 1/2 oz can diced tomatoes, undrained
- 1 package frozen spinach
- 1/2 c Parmesan
- 1 tsp dried basil

1. Cook pasta according to package directions.

2. Cook spinach 4 minutes in the microwave. Drain and squeeze dry.

3. While the pasta and spinach are cooking, heat oil in a large saucepan over medium-high heat. Add the garlic and cook for 3 minutes. Add the broth, red pepper flakes and the tomatoes. Bring to a boil. Reduce heat and simmer for 6 minutes, stirring occasionally. Remove from heat and stir in the spinach.

4. Drain pasta and place in a large bowl. Add the tomato mixture and toss well. Sprinkle on cheese and the basil.
