Make Ahead Mashed Potatoes
Delicious potatoes to make the night before
ingredients
- 8 large baking potatoes
- 12 oz cream cheese, softened
- 1/2 C butter, softened
- 1/2 C sour cream
- 1/2 t salt (or to taste)
- 1/4 t pepper (or to taste)
- 2 T chilled butter, cut in pieces

Peel potatoes and cut into quarters. Boil in large pot of water until potatoes are fork tender. Drain. Place in large mixing bowl and beat with mixer until potatoes are light and fluffy.

Beat in cream cheese and 1/2 C butter. Beat in sour cream and seasoning.

Scrape into heavily buttered casserole and refrigerate covered with plastic wrap.

Bring to room temperature. Dot with chilled butter pieces.

Bake at 300 degrees 30 minutes or until heated through.
