Penne with Creamy Tomato Sauce
For Jods and Scott....
ingredients
- 1 lb penne or rigatoni
- 1/4 cup of olive oil
- 2 tsp fresh minced garlic
- 1/2 tsp fresh minced chili
- 14 oz canned Italian chopped tomatoes
- 1/4 cup vodka (optional)
- 1/2 cup thick cream
- coarse salt
- black pepper
- 2 tsp sugar

Heat the garlic in olive oil in a medium size pot
- 2
Add the chili, simmer for a few minutes and then add the chopped tomatoes. Simmer for about 15 minutes uncovered

Pour in the vodka and cream and simmer for a little longer or until thickened

Add salt, pepper, and sugar to taste

Cook the pasta until ready

Toss with the sauce and serve immediately

Add a little Parmesan and some chopped parsley for a little more flavor
