HALIBUT WITH LEMON, SHALLOTS AND HERBS ( OR ANY FISH )
ingredients
- 1/4 cup butter or margarine
- 2 tsp. chopped shallots or chives
- 2 tsp. chopped tarragon or dill
- 2 tsp. chopped parsley
- 1/2 tsp. Dijon mustard
- 1/2 tsp. lemon juice
- 1/4 tsp. crushed garlic
- 4 fillets (6 oz.) halibut or sea bass

In small bowl, mix together margarine, shallots, tarragon, parsley, mustard, lemon juice and garlic till well combined. Store covered in refrigerator till ready to use.

Broil fish for 4 to 6 minutes per side till it flakes in centre with fork.

Spread about 1 tbs. of the spread over each portion of fish.
