Chicken Stifado
This recipe has great potential for improvisation. It is “officially” made using octopus instead of chicken. I use chicken but maybe pork or shrimp might work? Also browning the chicken at the beginning really helps if using chicken.
ingredients
- 3 lbs boneless chicken breast
- 2 lbs onions cleaned and roughly chopped
- 1 1/2 cups olive oil
- 1/2 cup red vinegar
- 1 head garlic, cleaned and roughly chopped
- 3 bay leaves
- 1 stalk rosemary
- Salt
- Fresh ground black pepper
- 1 1/2 cups ripe tomatoes, cleaned and roughly chopped

Brown the chicken in the olive oil in a large pot. Generously season with salt and pepper.

Add all other ingredients to pot. Cover, and simmer for about 1 hour until all the liquid has been absorbed and a little oil remains.
