Chicken Parmesan
I don’t know where the Bortell’s find time to come up with great recipes such as the one below, as they are plenty busy with their new baby, Brenna, born May 20th of this year (2000).
ingredients
- 4 skinless and boneless chicken breasts
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 Tbsp fresh basil
- 2 Tbsp oregano
- 2 Tbsp rosemary
- Minced garlic (your preference)
- 1 Tbsp fresh lemon juice
- 2 sliced tomatoes
- Parmesan cheese

Pound the breasts until flattened.

Mix the next 7 ingredients together and use as a marinate for about 3 hours.

Grill the chicken about 6 minutes per side until just done, using the marinade for basting the chicken as needed.

Place a breast on each plate. Cap with slices of tomato and sprinkle with 1 Tbsp of Parmesan cheese.
