Potato Cheese Soup
ingredients
- 2 Baking potatoes
- 3 tbsp butter
- 1 cup diced onion
- 2 tbsp flour
- 4 cups chicken broth
- 2 cups water
- 1/4 cups cornstarch
- 1 1/2 cups instant mashed potatoes
- 1 tsp. salt
- 1/2 tsp pepper
- 1/2 tsp basil
- 1/8 tsp thyme
- 1 cup half and half
- 2 cups chopped Velveeta cheese
- 2 chopped green onions
- 1/2 cup shredded cheddar cheese
- 1/4 cup crumbled cooked bacon

Microwave potatoes medium soft, enough to cut into cubes. Peel the potatoes after they are cooked.

Melt butter in large saucepan. Saute onion until light brown, add flour and stir to make a rue.

In a large pot mix the seasons, water, chicken stock, and the half and half. Medium boil, then add the cornstarch. Stir in until clumps are gone.

Add the instant potatoes,stir till clumps are gone. Add the cheese.

Garnish with green onions and 1/2 cup shredded cheddar cheese and 1/4 cup cooked bacon.
