Glazed Pork Tenderloin
this is great because you can do it on the grill or in the oven, depending on the time of year. it’s not a ton of work, but has wonderful flavors because it marinates all night. it goes great with red-skin potatoes and green beans.
ingredients
- 2 tsp dried oregano
- 1 tsp dried parsley flakes
- 1/2 tsp dried rosemary, crushed
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp seasoned salt (Lawrys)
- dash pepper
- dash cayenne pepper
- 1 pork tenderloin (about 3/4 lb)
- glaze:
- 4 1/2 tsp brown sugar
- 4 1/2 tsp Dijon mustard
- 1/4 tsp honey

In a small bowl, combine the first eight ingredients. Rub over pork and place tenderloin in a large resealable plastic bag. Seal bag and refrigerate overnight.

Combine the glaze ingredients. Place tenderloin on a rack in a foil-lined shallow roasting pan and bake, uncovered, at 350 for 40-45 minutes or until a meat thermometer reads 160. Baste occasionally with glaze. Or place tenderloin on the grill on medium-high heat for 40-45 minutes, basting occasionally. Let stand 5 minutes before slicing
